Fish & Jollof Rice

Sauteed fish with mushrooms, yellow peppers, onions and green onions and Nigerian jollof rice. Bold spices and tasty flavors...

Ingredients:
Fish (5 pieces or your choice)
Oil (Olive preferably)
Mushrooms (Cut in quarters)
Yellow Bell Peppers
Onion slices
Green onions
Garlic
Salt, peppers and thyme

Directions:
1) Heat oil till it's hot, then add the seasoned fish and let it saute for 14 minutes (7 minutes on each side)
2) Add the cut mushrooms, peppers and onions (cut time 2 minutes) and let it cook for 4 minutes
4) Ready to serve.
