Fish & Potatoes

Baked cod fish, potatoes, spinach and a touch of Nigerian suya spice. Just in time for dinner, this dish combines the crunchiness of baked cod fish covered in suya spiced bread crumbs with sauteed potatoes and garlic seasoned spinach

Time 45 mins.

Ingredients:
Cod fish, breadcrumbs
1 teaspoon of butter
1 teaspoon of Nigerian Suya Spice
Salt
Thyme
Garlic
Potatoes
Spinach

Directions:
1) Heat the 1 teaspoon of butter, then using a brush; coat the fish with the butter. In a separate bowl mix the breadcrumbs with salt, thyme, garlic and Nigerian Suya Spice. Sprinkle the mixed breadcrumbs on the coated fish. Place it in the 400 degrees oven and let it bake for 30 minutes.
2) Cut each potatoes in quarters and let it boil for 10 minutes, then place it in a lightly greased hot pan for 3 minutes or until golden brown. 
4) Place the spinach in a pot with grounded garlic, salt and let it cook for 2 minutes.
